Sweet Potato Wrap

1/2 cup vegetable oil 1 tsp of garlic powder Freshly ground pepper 2 tsps salt Freshly ground pepper to taste 4 sweet potatoes, scrubbed & cut lengthwise into wedges 4 cups of mixed wild greens Ba Da Bing Balsamic Dressing Four 18” tortillas

Place oil, garlic powder, pepper, salt, sweet potatoes in a large ziplock bag. Shake until sweet potatoes are coated. Spread the sweet potatoes in an even layer on a baking sheet and place in a 400 degree oven. Bake for 20-25 minutes until tender.

Let sweet potatoes cool. Heat tortillas in already hot oven for just a few minutes. Pull tortillas from oven and place on a flat surface. Place 1/4 of the sweet potatoes on the tortilla, top with 1 cup of mixed wild greens, drizzle with Bing Cherry Balsamic. Roll into a burrito. Repeat with remaining tortillas.
